I have done some research on here about the edelbrock carb and a lot of people prefer the 39mm FCR card because of a response issue and some other things. Since you sell the edelbrock and, I’m assuming that you probably know a lot about it, I was wondering what your opinion is on it.

Well man, I'll be completely honest, I am not that knowlegeable on them. Most of our local customers (the ones we've tuned) have either used the stock carbs, or FCR's. That said, I don't think there is anything bad about the eldebrock, I just haven't got to play with one much.
The one thing I will tell you is the the FCR is a sensitive carb, so make sure you are adept on tuning/jetting if you decide to tackle it. I know the stock carbs are fairly forgiving, and I have heard that the eldebrock is fairly easy to set up as well.
